Learn how to make traditional Amboli and Coconut Chutney, a quick & easy Maharashtrian breakfast recipe from our chef Archana on Ruchkar Mejwani. <br /> <br />Ingredients: <br /> <br />For Amboli <br />2 small Cups Rice <br />1 small Cup Urad Dal <br />Salt <br /> <br />For Chutney <br />1 Cup Grated Coconut <br />4 Dry Red Chillies <br />7-8 Garlic Cloves <br />1/2 Lemon Juice <br />1 Onion <br />Salt to taste <br />Water <br /> <br />Method: <br /> <br />To Make Amboli: <br />- Soak the the urad dal and rice separately for at least 6 - 7 hrs <br />- Grind the urad dal and rice in minimal water in a mixer to make a smooth paste. <br />- Mix the two and let it ferment overnight. <br />- Add salt and mix it well. <br />- Heat a pan with very little oil. <br />- Spread the batter on the pan using a spoon in a circular motion. <br />- Cover it with a lid and let the Amboli cook. <br />- Once it is cooked, remove it from the pan. <br /> <br />To Make Chutney: <br />- In a mixer grinder add grated coconut, dry red chillies, garlic cloves, lemon juice, onion, salt & water. <br />- Grind everything to a coarse paste. <br />- Chutney is ready.
